Herbed Cauliflower

This is a simple way to prepare cauliflower when it is in season in California.  The combination of fresh rosemary needles, thyme, and oregano add a delicious savory flavor and a beautiful color. 

Serves 2-4

Ingredients

  • 2 small heads cauliflower , cut into small florets

  • 2 1/2 tablespoons fresh herbs , chopped (I used rosemary needles, thyme, and oregano)

  • 4 tablespoons extra virgin olive oil

  • Sea salt and freshly ground black pepper

Instructions

  • Heat the olive oil in a cast-iron skillet over medium-high heat. Add the cauliflower, season with salt and pepper, and cook, stirring, for 10 minutes or until browned. Add the herbs to the skillet and continue cooking for 3-4 minutes longer, stirring. Remove from the heat.

  • Transfer the cauliflower to a serving platter or large dish. Sprinkle with additional sea salt, if desired. Serve with Meyer lemon wedges on the side. Serve immediately.
