Pasta with Squash Blossoms, Basil, Garlic, and Pine Nuts

This is a simple way to prepare your favorite pasta.  Chopped summer squash blossoms, fresh basil, and garlic, turns this into a fresh tasting and delicious dish.

Serves 4-6

Ingredients

  • 12 squash blossoms , stems and stamens removed, finely chopped

  • 1/2 cup fresh basil leaves , chopped or torn

  • 4 garlic cloves , chopped

  • 2 tablespoons pine nuts , toasted

  • 1/2 cup extra-virgin olive oil

  • 12 ounces of your favorite dried spaghetti

  • Parmigiano Reggiano for serving

  • Sea salt and freshly ground black pepper

Instructions

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until it is al dente. Drain the pasta, reserving 1 tablespoon of the water.

  • Heat the olive oil over medium-high heat. Add the garlic and cook for 1 minute, stirring. Add the squash blossoms, pasta, pine nuts, and reserved water. Season with salt and pepper and cook for 2 minutes, gently stirring until combined.

  • Transfer the pasta to individual bowls. Sprinkle with the basil and Parmigiano Reggiano over the top. Serve immediately.
