Peach, Honey, Thyme, Goat Cheese, and Cinnamon Frittata
This frittata takes on a nice flavor from the ground cinnamon and honey in this recipe. This is a good dish to make when fresh peaches are in season and at their peak
Serves 4
Ingredients
4 thin slices of a yellow peach
1 teaspoon ground cinnamon
1 teaspoon granulated sugar
1/4 cup wildflower honey
1 tablespoon fresh thyme leaves , plus additional for garnish
1/8 cup plain goat cheese , crumbled
6 large eggs
2 tablespoons extra-virgin olive oil
Instructions
Preheat the oven to 350°F.
Whisk the eggs together in a medium bowl. Add the cinnamon, sugar, and honey to the bowl. Stir until combined.
Heat the olive oil in a medium cast-iron skillet over medium-high heat. Add the eggs to the pan and cook for 4 minutes. Arrange the peaches over the top and sprinkle with the thyme and goat cheese. Place in the oven and bake for 20 to 25 minutes. Remove from the oven.
Slice into wedges and serve immediately.
