Peach, Honey, Thyme, Goat Cheese, and Cinnamon Frittata

This frittata takes on a nice flavor from the ground cinnamon and honey in this recipe.  This is a good dish to make when fresh peaches are in season and at their peak

Serves 4

Ingredients

  • 4 thin slices of a yellow peach

  • 1 teaspoon ground cinnamon

  • 1 teaspoon granulated sugar

  • 1/4 cup wildflower honey

  • 1 tablespoon fresh thyme leaves , plus additional for garnish

  • 1/8 cup plain goat cheese , crumbled

  • 6 large eggs

  • 2 tablespoons extra-virgin olive oil

Instructions

  • Preheat the oven to 350°F.

  • Whisk the eggs together in a medium bowl. Add the cinnamon, sugar, and honey to the bowl. Stir until combined.

  • Heat the olive oil in a medium cast-iron skillet over medium-high heat. Add the eggs to the pan and cook for 4 minutes. Arrange the peaches over the top and sprinkle with the thyme and goat cheese. Place in the oven and bake for 20 to 25 minutes. Remove from the oven.

  • Slice into wedges and serve immediately.
