Green Chard, Potato, Garlic, and King Salmon Soup

The ingredients go together beautifully in this hearty stew.  I personally love the heat from the chili powder in this recipe. 

Serves 4

Ingredients

  • 1 tablespoon extra-virgin olive oil

  • 3 cups green chard , stems and leaves removed, chopped

  • 5 yellow potatoes , halved and cut into chunks

  • 6 garlic cloves , peeled

  • 2 pounds wild caught king salmon fillet , skin removed and cut into medium pieces

  • 1/2 to 1 tablespoon chili powder

  • 1/4 cup dry white wine

  • 5 cups water

  • Sea salt and freshly ground black pepper

Instructions

  • Heat the olive oil in a large pot over medium heat. Add the garlic and cook for 5 minutes to soften. Add the potatoes and chili pepper and cook for 4 minutes longer. Add the green chard, wine, water and season with salt and pepper. Bring to a boil. Reduce the heat to low and simmer for 30 minutes. Taste for seasoning. Add the salmon and poach until they are just cooked through. Remove from the heat.

  • Divide the soup into individual bowls. Serve immediately.
